Granny Mac's Fried Eggplant (with cheese)
| Amount | Ingredient |
| 1 Large | Eggplant, sliced and peeled |
| 2-3 tablespoons | Canola Oil |
| 3 | Eggs | 1 1/2 cups | Italian Bread Crumbs |
| 2 tablespoons | Gator Grill Seasoning |
In honor of Granny Mac, this is as close as I can come to what she used to make us many many years ago, which came right out of their garden (spice & cheese are my add ons). Combine, bread crumbs and spice. Bring oil in skillet up to medium heat. Dip eggplant into egg. Then dip into breadcrumb mix. Then dip into egg again. Then dip into parmesan cheese. Fry 2-3 minutes, flip, fry 2-3 minutes longer. Be very careful here, golden brown is perfect, but if it burns it won’t be good at all. Add with spaghetti sauce & mozzarella to make eggplant parmesan, or eat it just like this.
