Gator Blue Cheese Burgers

Amount Ingredient
3 pounds Ground Beef or Chuck
1 tablespoon Gator Italian Seasoning
1 teaspoon Salt
2 teaspoons Black Pepper
1 teaspoon Worcestershire Sauce
1 dash Gator Hot Sauce
6 ounces Crumbled Blue Cheese
16 slices Cooked Bacon
2 packs Hamburger Buns

Combine ingredients and form into patties. If you chill in the fridge for about 10-15 minutes, the patties will hold together better. Grill high heat 3-4 minutes each side for medium rare, 4-5 medium, 6-7 for well done. Top with cheese in the last minute or so, and then serve with buns and other condiments.

 

 

Orange and Blue Chicken

Amount Ingredient
4 split Chicken Breasts
12 ounces Florida Orange Juice
1 ounce Brown Sugar
1 ounce Soy Sauce
1 teaspoon Black Pepper
1 clove Chopped Garlic
1 bag Blue Corn Chips

Place chicken in airtight container. Combine orange juice, brown sugar, soy sauce, and black pepper. Pour orange juice mixture into container with chicken. Marinate 6-8 hours. Remove chicken and save half the marinade. Grill over medium heat for 20-30 minutes, flip, then grill 20-30 minutes longer (depending on meat and heat). Bring marinade to a boil in saucepan for 2-3 minutes. Pour over chicken, serve with blue corn chips.

 

 

Granny Mac's Fried Eggplant (with cheese)

Amount Ingredient
1 Large Eggplant, sliced and peeled
2-3 tablespoons Canola Oil
3 Eggs
1 1/2 cups Italian Bread Crumbs
2 tablespoons Gator Grill Seasoning

In honor of Granny Mac, this is as close as I can come to what she used to make us many many years ago, which came right out of their garden (spice & cheese are my add ons). Combine, bread crumbs and spice. Bring oil in skillet up to medium heat. Dip eggplant into egg. Then dip into breadcrumb mix. Then dip into egg again. Then dip into parmesan cheese. Fry 2-3 minutes, flip, fry 2-3 minutes longer. Be very careful here, golden brown is perfect, but if it burns it won’t be good at all. Add with spaghetti sauce & mozzarella to make eggplant parmesan, or eat it just like this.

 

 

Gator Hot Wings

Amount Ingredient
1 dozen Chicken Wings
2 bottles Gator Hot Sauce
1 stick Butter

Fry wings at 350-375 degrees about 10 mins, or until crispy in about 2 inches of oil, or grill on high heat for 4-5 mins per side. Combine 1 stick of butter and 2 bottles of Gator Hot Sauce and bring to a boil in saucepan. Mix sauce and wings in large bowl and serve with blue cheese and celery, or any sides you like. Use Urban Warfare Hot Sauce to truly kick it off several notches, but beware!

 

 

Gator Spare Ribs

Amount Ingredient
2 slabs Pork Spare Ribs
8 tablespoons Gator Grill Seasoning
2 tablespoons Brown Sugar
2 bottles BBQ Sauce

Prepare the ribs for cooking by removing the membrane first from the bone-side of the ribs. Coat the ribs in Gator Grill Seasoning and brown sugar mix, and then let sit in fridge for at least 1 hour. Grill on low heat. It generally takes 2-3 hours, but will vary depending on heat source and size of ribs. When the ribs appear to be about done, coat generously with Gator BBQ Sauce, and then 10 minutes later flip the ribs and coat again. Leave them on for 10 more minutes, then remove from heat and serve 'em up. An alternate: Preheat oven to 275 and bake ribs for 3-4 hours, then thrown on the grill for the last 30 minutes. Sauce during the last 10 minutes.

 

 

Gator Balls

Amount Ingredient
1 pound Ground Chuck
4 ounces Breadcrumbs
4 Eggs
4 ounces Milk
1 Onion
2 tablespoons Gator Italian Seasoning
6 oz Romano Cheese

Combine ingredients and then make golf ball size meatballs. Bake at 350 for 35 mins. Eat them with a toothpick and your favorite dip (we used BBQ sauce, and ranch dressing as the dips), or add to spaghetti sauce and serve with pasta.

 

 

Gator Crab Cakes

Amount Ingredient
1 pound Lump Crab Meat
3/4 cup Breadcrumbs
1 Egg
1 tsp Worcestershire sauce
1/2 tsp Gator Shrimp and Crab Boil
2 tsp Brown Mustard
1/2 cup Red Bell Pepper
1/4 tsp Sea Salt

Drain, meat, mix ingredients in a bowl, and form into little burger size patties (If you let the cakes chill in the fridge for about 15-20 minutes, they will hold together better). Fry in a small amount of oil for about five minutes per side.

 

 

Gator Salsa

Amount Ingredient
4 Tomatoes
3 tbls Cilantro
2 cloves Garlic
1 Cayenne Pepper
1/2 Vidalia Onion
1/4 tsp Gator Taco Seasoning

Chop first five ingredients, mix well with seasoning and serve.

 

 

Gator Black Bean Salsa

Amount Ingredient
3 small cans Diced Tomatoes with Chilis
1 large can Black Beans
1 small can Corn
1 dash Gator Hot Sauce
1/2 Vidalia Onion
1/4 tsp Gator Taco Seasoning
1 cup Italian Dressing
1 dash Salt and Pepper

Mix well and serve.

 

 

Gator Bacon Wrapped Grilled Shrimp

Amount Ingredient
1 pound Medium Shrimp-peeled
1 pound Bacon
1 tbls Gator Seafood Seasoning
1 dozen Skewers

Soak skewers for 20-25 minutes in cold water. Cook bacon half-way through, and after it cools down, wrap around shrimp. Skewer shrimp. Sprinkle on Gator Seafood Seasoning, and grill on high heat for 5 minutes, flip, and then grill for another 3-4 minutes until shrimp are pink. Serve and enjoy!

 

 

Gator Chili

Amount Ingredient
2 pounds Ground Beef
1 pound Cubed Chuck
8 tablespoons Gator Taco Seasoning
3 tablespoons Olive Oil
1 large Red Bell Pepper
1 large Yellow Bell Pepper
1 large Green Bell Pepper
2 large Vidalia Onion
4 cloves Chopped Garlic
2 cups Tomato Sauce
1 cup Tomato Paste
12 ounces Dark Beer
2 cups Chicken Stock
2 cups Cooked Black Beans
2 cups Cooked Red or Pink Beans

Combine tomato sauce, tomato paste, peppers, onion, garlic, and beer in a large pot over medium heat. Use a large skillet to heat oil and brown beef, then drain. Add Gator Taco Seasoning. Stir meat into tomato mix and simmer until peppers and onions have cooked down thoroughly. Then add beans in the final few minutes. Serve topped with shredded cheese and chopped cilantro.
